Gazpacho
Ingredients
- 3 medium fresh tomatoes, peeled and chopped
- ½ large or whole small cucumber, seeded and chopped
- ½ medium green pepper, chopped
- 2 green onions, sliced
- 2 cups V-8 or vegetable juice cocktail
- 1 tablespoon lemon juice
- 1 tsp fresh minced or ½ tsp dried basil
- ¼ tsp hot pepper sauce
- 1 clove garlic, minced
Preparation
In large mixing bowl, combine all ingredients. Cover and chill in the refrigerator for several hours. Serve as summer cold soup. If you prefer a smooth gazpacho, you may blend the soup prior to chilling to your preferred consistency. Enjoy!
