Corn Off the Cob Chowder

Corn chowder with bacon, potatoes, onion, corn, and milk, along with chopped celery and carrots.

Ingredients

  • 3 slices bacon, diced or "snipped" with kitchen shears
  • 3 tablespoon minced onion (green onion is nice)
  • 2 1/2 cups diced potatoes
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped carrot
  • 1 cup boiling water
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon ground black pepper
  • 1 can (15 ounces) cream-style corn
  • 2 cups cooked fresh corn kernels cut off the cob
  • 2 cups milk

Preparation

Fry diced bacon until it begins to brown; add onion and sauté until onion is tender. Add potatoes, celery, carrot, and boiling water. Cover and cook for 10 minutes, or until potatoes are tender. Stir occasionally. Add salt, pepper, corn, and milk. Bring just to the boil. Serve immediately.
